Shooting weddings is tough work, especially handling the lighting. Have you looked at Canon's Digital Photo Professional (came with your camera) for processing RAW? It's not as integrated workflow-wise with photoshop but I found it to be more pleasing/accurate color-wise than Adobe's raw converter. Of course that was with CS1 so the situation may have dramatically changed over the years. Anyways, just my 0.02. Always good to get some practice in.
